- A handful of fresh mint leaves
- 1 tbsp capers (optional, but recommended)

Scoop or cube the melon and place it in a bowl. Add a pinch of salt and a drizzle of honey if needed. Chill in the fridge for 15–20 minutes so the flavours develop. -

In a small jar, combine olive oil, lemon juice, vinegar, a pinch of salt, pepper, and 1 tsp honey. Shake until well combined and emulsified. -
Assemble the salad:
Tear the mozzarella into chunks and arrange on a serving plate. Top with chilled melon (avoid any extra juice). Scatter mint leaves and capers on top. -
Finish with dressing:
Drizzle the dressing generously just before serving. Enjoy immediately for best taste and texture.
